  3. Having retreated a few centimeters from the bottom plane (5-6 cm along the side surface), cut out a small window intended for throwing wood chips during cooking.
  4. They build a support on which the tank (body) of the machine will be installed.
  5. Return the housing to the correct position (bottom down) and begin to arrange a support for the grate inside the drum.
  6. The performance of the smokehouse will depend on the number of grates installed inside the tank.

The support for the first grid is made at a height of at least 40 cm from the bottom, the next one will be located at a distance of 25-30 cm from the first.

The prepared structure is installed above a hole previously made in the ground. Its depth should not be less than 50 cm. This will allow you to build a fire and achieve sufficient heat so that the bottom of the tank becomes hot, and the wood chips placed inside begin to smolder, releasing aromatic thick smoke.

As needed, firewood is added to the fire, and wood chips are added to the tank. After 1-1.5 hours you can take a sample.

To cook fish, 45-50 minutes are enough, meat – 1.5 hours, lard – 1 hour.
